Magic Bar Cookies
Ingredients:
1 1/2 cups graham cracker crumbs
1/2 cup (1 stick) butter, melted
1 (14-ounce) can sweetened condensed milk (NOT evaporated milk)
1 cup (6 ounces) butterscotch-flavored chips
1 cup (6 ounces) semi-sweet chocolate chips
1 1/3 cups flaked coconut
1 cup chopped nuts
Directions:
1. Preheat oven to 350 degrees F (325 degrees F for glass baking pan). Line a 13x9-inch baking pan (including sides) with a sheet of aluminum foil. Coat foil lightly with no-stick cooking spray.
2. In small bowl, combine graham cracker crumbs and butter; mix well. Press crumb mixture firmly on bottom of 13x9-inch baking pan.
3. Layer chips, coconut and nuts evenly over crust.
4. Pour condensed milk evenly over top of everything.
5. Bake 25 minutes or until lightly browned. Cool.
6. Lift up edges of foil to remove from pan. Cut into individual squares. Lift off of foil.

Butter Cookies

Ingredients:
2 1/2 cups all-purpose flour
1 teaspoon baking powder
2 sticks (1 cup) butter, softened
1 cup sugar
1 Tablespoon vanilla extract
1 large egg
Directions:
1. Whisk together flour and baking powder in a small bowl.
2. Beat together butter and sugar in a large bowl with an electric mixer at medium-high speed until pale and fluffy, about 3 minutes in a standing mixer (preferably fitted with paddle attachment) or 6 with a handheld. Beat in egg and vanilla. Reduce speed to low, then add flour mixture and mix until just combined.
3. Form dough into a 12-inch roll (2 inches in diameter) on a sheet of plastic wrap and roll up dough in plastic wrap. Chill dough 4 hours or until firm.
4. Preheat oven to 375 degrees F.
5. Cut roll into 1/4-inch-thick slices and place on large baking sheets about 1-inch apart.
6. Bake for 10 to 12 minutes or until golden brown. Cool on sheets 3 minutes, then transfer to wire racks.

Chocolate Drop Cookies

Ingredients:
1 cup sugar
1/2 cup butter, softened
1/3 cup buttermilk
1 teaspoon vanilla
2 ounces unsweetened baking chocolate, melted
1 egg
1 3/4 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup chopped nuts
Chocolate Frosting Ingredients:
2 ounces unsweetened baking chocolate
2 Tablespoons butter or margarine
2 cups powdered sugar
3 Tablespoons hot water
Directions:
1. Heat oven to 375 degrees F. Grease cookie sheet. Beat sugar, butter, vanilla, buttermilk, egg and chocolate in large bowl with electric mixer on medium speed.
2. Stir in flour, baking soda, salt and nuts.
3. Drop dough by rounded tablespoonfuls onto cookie sheet, 2 inches apart.
4. Bake 8 to 10 minutes. Cool completely on wire rack. Frost with Chocolate Frosting.

Chocolate Frosting Directions:
1. Melt butter and chocolate in 2-quart saucepan over low heat, stirring occasionally; remove from heat.
2. Stir in hot water and powdered sugar until smooth. If frosting is too thick, add more water, if it is too thin, add more powdered sugar.

Ingredients:
6 eggs
3 cups brown sugar
2 cups granulated white sugar
1 Tbsp. vanilla extract
1 cup (2 sticks) butter, softened
3 cups creamy peanut butter
9 cups oatmeal (must be old fashioned rolled oats)
2 cups plain M & M's
2 cups semisweet chocolate chips
4 tsp. baking soda
Directions:
1. Cream eggs, butter, sugars, vanilla, and peanut butter.
2. In a separate bowl; mix oatmeal, M&Ms, chocolate chips, and baking soda.
3. Combine dry ingredients with creamed mixture and mix well.
4. Drop by large scoopfuls on to cookie sheet.
5. Bake at 350 degrees F for 12 minutes.

Ingredients:
1 cup (2 sticks) butter, softened

1/4 cup cornstarch
Directions:
1. Preheat oven to 350 degrees F (190 degrees C).
2. Cream butter and sugar. Slowly add flour and cornstarch. Mix well.
3. Press dough into a 10x15 inch jellyroll pan, score into bars and prick with a fork.
4. Bake 15 to 18 minutes in the preheated oven, until golden brown.

1 (3 ounce) package cream cheese, softened
1/3 cup butter or margarine, softened

1. Preheat oven to 350 degrees F.
2. Combine flour, baking powder, baking soda, salt, cinnamon, ginger and cloves in medium bowl. Beat shortening and granulated sugar in large mixer bowl for 30 seconds.
3. Add pumpkin, eggs and 2 teaspoons vanilla extract; beat until blended. Gradually add flour mixture into pumpkin mixture at low speed until combined.
4. Stir in raisins. Drop by rounded teaspoons onto ungreased baking sheets.
5. Bake for 12 to 15 minutes or until edges are golden brown. Cool on baking sheets for 2 minutes; remove to wire rack to cool completely.
6. Mix all frosting ingredients together with an electric mixer until smooth.
7. Frost cookies with Cream Cheese Frosting. Sprinkle nuts on top.

Directions:
1. Preheat oven to 400 degrees F.
2. Mix butter, sugar, and eggs.

For years we searched for a great chocolate chip cookie recipe. After dozens of test recipes, we created the perfect chocolate chip cookie. This is it. Not too chewy, not too crispy, not too cakey...just right.
Chocolate chip cookies like these are addicting, so throw away the scale and make extras for the cookie jar!

Chocolate Chip Cookies

Ingredients:
2 cups + 3 Tablespoons all-purpose flour
3/4 teaspoon baking soda
3/4 teaspoon salt
3/4 cup (1 1/2 sticks) butter, softened to room temperature*
1 Tablespoon milk
1 cup packed light brown sugar
1/2 cup white sugar
1 large egg
1 large egg yolk
2 teaspoons vanilla extract
1 1/2 cups (9 ounces) semisweet chocolate chips**
*melt the butter if you prefer chewier textured cookies
**increase to 2 cups (12 ounces) if you like a lot of chips in each cookie (this will also increase the overall sweetness of the cookies)
Directions:
1. Preheat oven to 375 degrees F. Line two large baking sheets with parchment paper.
2. Sift together the flour, salt, and baking soda, set aside.
3. Using a mixer; cream together the butter, milk, brown sugar, and white sugar until thoroughly blended.
4. Add in the egg, the egg yolk, and vanilla and mix until well blended and smooth (about 1 minute).
5. Slowly blend in the flour mixture and mix until just combined. Do not overbeat.
6. Add the chocolate chips, and mix until they are evenly distributed throughout the batter (about 30 seconds).
7. Drop by rounded 2 Tablespoons (use a cookie scoop or combine 2 Tablespoons of dough into a rounded drop) onto the prepared cookie sheet, about 2 inches apart. Repeat until all dough is used.
8. Bake for 9 to 11 minutes in the preheated oven. The cookies should have golden brown edges and soft centers.
9. Remove from oven, and let cool on baking sheet for 1 minute. Transfer to a wire rack, and let cool completely.

Soft Oatmeal Cookies

Ingredients:
1 cup butter, softened
1 cup white sugar
1 cup packed brown sugar
2 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 1/2 teaspoons ground cinnamon
3 cups quick cooking oats
raisins or nuts (optional)
Directions:
1. In a medium bowl, cream together white sugar, butter, and brown sugar. Beat in eggs one at a time, then stir in vanilla.
2. Combine flour, cinnamon, baking soda,and salt. Stir into the creamed mixture. Mix in oats. If you are using nuts or raisins, mix into dough, combining well. Cover, and chill dough for at least one hour.
3. Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets. Roll the dough into balls, and place 2 inches apart on cookie sheets.
4. Bake for 8 to 10 minutes in preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Makes approx. 36-60 cookies, depending on how large or small you make them.
